MICROVINIFICATIONS

Starting from the 2015 harvest, the Classico Berardenga Association made the strategic decision to focus attention on the geo-pedological study of the main types of soil found within the municipality of Castelnuovo Berardenga, identifying and examining three  types highly representative of the viticultural cultivation in the area: the “Macigno del Chianti”, the “Galestro” and the “Sabbie Plioceniche”.

Subsequently, micro-vinification trials were carried out with Sangiovese grapes, selecting two samples for each type of soil, one from the east wing of the butterfly vineyard shape typical of the municipality of Castelnuovo and one attributable to the west wing.

This complex work, which lasted two years, represented the beginning of a more structured zoning project, thanks to the collection of evaluations and analytical data fundamental for a more careful classification of the soils, an effort whose natural continuation will be explored in the project dedicated to the CRUs.
